06 - 2 teaspoons lemon zest (about 1 large lemon)
07 - 1 tablespoon finely grated fresh ginger
08 - 1 teaspoon vanilla extract
→ Optional Add-ins
09 - 1/4 cup finely chopped crystallized ginger
10 - Pinch of sea salt
# Steps to follow:
01 - Add almond flour and shredded unsweetened coconut to a large mixing bowl.
02 - Pour in pure maple syrup or honey, fresh lemon juice, lemon zest, grated ginger, vanilla extract, and a pinch of sea salt.
03 - Stir thoroughly until a thick, cohesive dough forms. Fold in crystallized ginger if desired.
04 - Using a tablespoon, portion and roll the mixture into balls.
05 - Roll each ball in extra shredded coconut until evenly coated.
06 - Arrange balls on a parchment-lined tray and refrigerate for a minimum of 30 minutes to firm.
07 - Transfer energy balls to an airtight container. Refrigerate for up to 1 week.
