Instructions
- Prep Cake:
- Preheat oven to 350°F (175°C). Grease and line an 8 inch (20 cm) square cake pan.
- Cream Ingredients:
- In a large bowl cream butter and sugar until light and fluffy. Add eggs one at a time mixing well. Stir in vanilla extract.
- Combine Dry Ingredients:
- In a separate bowl whisk flour baking powder and salt. Add dry ingredients to wet ingredients in two parts alternating with milk. Mix until just combined.
- Add Sprinkles & Bake:
- Fold in rainbow sprinkles gently. Pour batter into prepared pan. Bake for 30 to 35 minutes or until a toothpick inserted comes out clean. Cool completely.
- Prepare Filling & Form Pops:
- Crumble cooled cake into a large bowl. Mix cream cheese cayenne and cinnamon until smooth. Add mixture to cake crumbs. Mix until a dough forms. Scoop 1.5 tablespoons and roll into balls. Place on baking sheet. Insert sticks halfway into each ball. Chill in freezer at least 45 minutes.
- Coat & Decorate:
- Melt white chocolate until smooth. Dip each pop tapping off excess. Immediately sprinkle with crushed pretzels and rainbow sprinkles. Stand upright until set.
